This recipe has it all, it’s versatile, healthy, filling, and EASY to make.. The salad is great for a brunch, lunch, picnic or dinner. It’s a favorite of Aviator Athletics Coaches, and this delicious salad provides a variety of health benefits.
- Salad provides healthy fats from avocado and olive oil
- Watermelon is low calorie with lots of nutrients and vitamin C
- Watermelon is also mostly water, so it helps hydration
- The entire salad is low carb
Avocado, Watermelon & Cucumber Salad
- 2 Avocados – pitted (sliced or cubed)
- 1 Seedless watermelon – cut into 1 in. cubes
- 2 Cucumbers – peeled and cut into 1 in. cubes
- 2 TBS. fresh lime juice
- 2 TBS. olive oil
- 1/3 Cup fresh chopped cilantro (swap with fresh mint if desired)
- Seasoned with salt and pepper to taste
Fun Options!
- Swap cilantro with fresh mint if desired
- Add diced jalapeno for spice
- Serve on top of Arugula for a meal
